Autumn Pancakes- Mulled Maple Syrup

This is a fun festive twist that you can make on your maple syrup to add a holiday flare to your pancake stack. Top with roasted pumpkin and granola for a stack that is sure to impress. Recipe inspired by Executive Chef Lindsay Jones of the Pacific Picnic Co.

Ingredients:
 
2c maple syrup
1 cinnamon stick
1 large piece orange rind
3 whole cloves
Whiskey (For the Adults;)
Super Batter Adaptogen or Cacao Cinnamon Pancakes
Roasted Pumpkin (To Top)
Granola (To Top)
Directions:
 
Place syrup in a small sauce pot. Turn heat on low. Add cinnamon stick to the pot. Stud the orange rind with cloves, pour in a splash of whiskey, and simmer for 15 minutes.
 
Prepare Super Batter Pancakes while the syrup is simmering.
 
Remove spices with slotted spoon and transfer to a serving pitcher. Serve on pancakes or waffles topped with roasted pumpkin pieces and granola.
