This is a recipe for delicious and fluffy chocolate muffins made by our friend Izzy Davis @nutritionbusinessgirl from San Diego, CA. These muffins can be made gluten-free, dairy-free, and vegan.
Ingredients:
(Makes 3 Large Muffins)
1c Super Batter Cacao-Cinnamon Mix
1 large egg (or sub vegan egg as directed on bag)
1/2c sweetener of choice (sugar, honey, maple syrup)
3/4c non-dairy milk (can use regular milk if preferred)
Directions:
Preheat oven to 350F.
Line or grase muffin pan.
Whisk wet together.
Mix wet in with dry and fold until any lumps are out.
Bake 15-20 minutes or until center of muffins are cooked (Can poke with a toothpick and see if it comes out clean.)
Enjoy warm with vegan or dairy butter.
