This recipe for strawberry shortcake is so yummy, cute, and can be easily made at home using your super batter mix! This recipe can be made gluten-free, dairy-free, and vegan, if preferred.
Ingredients:
(Makes 6 cakes)
1c Super Batter Strawberry- Dragonfruit Pancake Mix
1 large egg (or sub vegan egg as directed on bag)
1/2c sweetener of choice (sugar, coconut sugar, honey)
3/4c milk (can use non-dairy milk if preferred)
Directions:
Preheat oven to 350F.
Line or grase muffin pan.
Whisk wet together.
Mix wet in with dry and fold until any lumps are out.
Bake 15-20 minutes or until center of cakes are cooked (Can poke with a toothpick and see if it comes out clean.)
Enjoy topped with berries and whipped cream.
